Yeah, I went there.

First of all, if you haven’t tried VitaTops before, you must! With a ton of vitamins, minerals, and fiber, they’re definitely a go-to treat for this sweet-toothed lady. Not to mention that they’re SO tasty and only 100 calories! (one of the few 100-calorie snacks I highly recommend.)
To make this particular treat, I microwaved a frozen Golden Corn VitaTop for 25 seconds. Then I soaked it for a couple of minutes in a mixture of:
- 1 egg
- 1 tbsp almond milk
- 1/2 tsp vanilla extract
- 1 tsp cinnamon
Cook the VitaTop for 2-3 minutes per side on a stovetop pan or griddle (medium heat). I topped it simply with butter.

Enjoy with a Green Monster for what is arguably one of the best breakfasts ever.

How can such a healthy breakfast be so decadent?!
I’ve got to get back to work. Ta-ta, babyloves! xoxo G

Anyone I’ve heard that has tried vita-tops love them, but I’ve never tried them. Although, i must admit, the idea of turning it into french toast sounds amazing
That looks delicious! Something I’m going to have to try!
I’m a sucker for the chocolate tops, but you’ve opened my eyes and I need to do some experimenting:)
Nom nom!
Um, genius. Period.
This is genius. Really. I have a whole box of the corn muffin tops and I’m not digging them plain. I’m all over this idea!

Now THAT’S a brilliant idea! I love me some vitatops. I’ve actually only tried the chocolate ones, but really want to try the other flavors too. Especially the new apple crumb cake one that just came out.
Oh my gosh the apple crumb sounds SO good!!
I have never tried VitaTops but the other day I found them on Amazon.com and decided I’d buy some. Then I got stuck in the flavor department. So maybe I’ll mine your comments for suggested flavors and buy some!
I haven’t tried all of them, but I can attest that the Deep Chocolate, Golden Corn, and Banana Nut are all delicious!! I’d have to say that Banana Nut is my favorite.
Holy crap that looks delicious. What a genius idea
I’m patiently waiting for Vita to come out with a gluten free muffin….haha.
You should email their website and ‘encourage’ them to make one and then name it after you..haha!
I’ve yet to have the Vitatop muffin, but I’m curious!!!
Meg – You should email them about it! I can’t help but think it’d be a big seller with so many people who are gluten-free these days!
Shanna – thanks for the suggestion…I may just do that
gracie this is so creative!!!! i might have to try it!
Wow so simple yet so creative! Must try this!! I am a huge fan of Vitatops..especially the chocolate peanut butter!

p.s. I apologize for that RIDICULOUS run on sentence. I really need to get back to school. Summer’s making me stupid.
This looks AMAZING. I ate a ton of Vitas last fall, and kind of ODed on them, but this is so original! I just wish they weren’t so expensive…and vegan!! Hope you’ve had a wonderful day love!!
